Could you please explain why one would choose to uninstall that feature, given that it would make the phone impossible to locate if it were lost?

There is no Find My Mobile, Samsung's is called Samsung Find, Google's is called Find Hub both of which you are able to be uninstall. Long press on the icon until you get the pop-up menu and uninstall it.

The important question is WHY?

"Find My Mobile", as a system app, I suspect helps support the Samsung Find app.
