Google pay not working on betas is normal. There was a warning saying this when you signed up. It works for some, breaks for others. Totally normal. It'll fix itself when the official release hits your device
Google Pay may not work properly while using a beta version of the software, as the build is not yet fully certified for all payment services. Because of this, you might see messages about unauthorised software or experience issues with completing transactions.
Here are a few steps you can try:
Make sure Google Pay is up to date – open the Play Store, search for Google Pay and install any available updates.
Clear the app’s cache and data – go to Settings → Apps → Google Pay → Storage → Clear cache, then Clear data.
Reinstall Google Pay – uninstall the app, restart your device, and then install it again from the Play Store.
If the issue continues, it may be resolved in a future beta update once certification and compatibility are fully restored.

@cloughy Standard that there can be issues as not certified for the Beta. A number may find it fine but cannot be guaranteed.
